Professor Francisco José Mataix Verdú (1941–2008) was a distinguished Spanish researcher and Chair of Physiology at the University of Granada. He was a pioneer in nutritional research, specifically known for his work on the health benefits of olive oil and Mediterranean diets. His legacy continues through the José Mataix Verdú Institute of Nutrition and Food Technology (INYTA) at the University of Granada.
